Colombia - Valle de Cauca Single-Origin (EA Decaf, Washed)
Origin: Valle de Cauca, Colombia
Tasting Notes: Chocolate, Cane Sugar, Citrus, Roasted Almond
BODY: Medium
ACIDITY: Bright
PROCESS: Washed & EA Decaffeination
Elevation: 1750 masl (5741 ft. above sea level)
Variety: Caturra, Castillo
Coffee Background
The Valle del Cauca is a critical piece of land where natural resources, water management, and environmental practices are preserved. As one of Colombia’s primary biological conservation corridors, the Cauca Valley is home to World Heritage national parks and wildlife that sustain the surrounding land. The region lies between the National Park of Tatama and the Serrania de los Paraguas where producers employ agroecology farming.
Note from the Roaster:
The cup is sweet, bright, and beautifully balanced, with a medium-bodied acidity and a juicy sweetness similar to mandarin orange. The washed processing gives the coffee clarity, while maintaining a smooth, sweet, aromatic profile. You’ll be met with classic nutty and semi-sweet chocolate undertones.
About the Producers
This coffee is sourced from various smallholders who live and farm in a region enclosed by mountains, creating a stable microclimate all year round. These producers are part of organizations committed to sustainable agroecology and preserving the vital biological corridors of their homeland.
Understanding the Process:
Sugarcane EA Decaf Ethyl acetate is an organic compound made with sugarcane. For this decaffeination process, it is created by fermenting molasses derived from sugarcane to produce ethanol, which is then mixed with acetic acid to create the ethyl acetate compound. This method allows for the removal of up to 97 percent of the caffeine without extracting the coffee’s original flavor attributes, preserving the sweetness and aromatics of the bean.
Processing Method
Washed (Fully Washed): Enhances clarity, brightness, and a clean cup profile typical of high-elevation Colombian coffees.
EA Sugarcane Decaf (Ethyl Acetate): A process using sugarcane-derived ethylacetate (EA) to remove caffeine while preserving sweetness and aromatics.
Roast Recommendations
Light Roast: Emphasizes the origin’s natural sweetness, citric acidity, and floral aromatics.
Medium Roast: Enhances nutty and chocolate notes while keeping a balanced sweetness and acidity.
Dark Roast: Lowers acidity and deepens flavors into dark chocolate and roasted almond for a bold, smooth profile.
Why You’ll Love It
Our decaf coffee drinkers love it because it’s flavor forward with no caffeine compromise. Expressing a clean and juicy profile that is easy to enjoy any time of day. Because specialty coffee is alive, you will notice how the cup changes as time passes, revealing complex layering and a refined profile that is a pleasure to come back to time and again.
